Just leave it out. There really isn't anything you can sub for alcohol in a soup. And, vinegar and soup generally do not mix. I don't recomend it. If your soup is too thick, you can always add more water.What would be an ok substitute for dry cider in a soup recipe?

Apple or most fruit juices.
