I need some recipes for good old comfort foods that mother use to make chicken soups etc?

Here are a few that my Mom made all the time- enjoy!





BAKED EGG CUSTARD





4 eggs


2 1/2 c. milk


1-2 c. sugar


Vanilla


Nutmeg





Place all ingredients in a saucepan. Beat together. (The secret of this custard is to beat gently until everything is just thoroughly mixed). Heat the mixture until hot, but not boiling. Place in baking dish, sprinkle more nutmeg over the top if desired and bake in a 325 degree oven for 40 minutes.








GOLDEN BAKED MACARONI AND CHEESE





录 cup butter


录 cup flour


3 cups milk


1 cup grated cheddar cheese


陆 teaspoon salt


陆 teaspoon dry mustard


录 teaspoon pepper


1 teaspoon Worcestershire sauce


陆 package (8 oz.) bite sized macaroni


1 cup grated sharp cheddar cheese


bread crumbs





Melt the butter in a large saucepan. Blend in flour and gradually add the milk, stirring constantly; add the seasonings. Cook until the sauce is thickened.


Add one cup grated cheddar cheese and stir until melted. Cook macaroni as directed, drain, and add to cheese sauce and mix well. Turn the mixture into an 8-inch square baking dish or pan. Sprinkle the top with 1 cup sharp cheddar cheese and breadcrumbs.





Bake in a 375掳F oven for about 15 minutes. Remove from the oven and place under the broiler until the cheese is bubbly and lightly browned. Serves 6-8.





Mustard Baked Chicken


Ingredients


1.5 lb skinless boneless chicken breasts - for extra moistness, don't defrost


1/2 cup prepared mayonnaise


1-3 T. mustard, according to taste


1/2 tsp. ground black pepper


1 tsp. paprika


1 tsp. minced onion


1 tsp. minced garlic


3/4 cup dry, unflavored bread crumbs


Preheat the oven to 375掳F.


Mix the mayonnaise and mustard in one bowl; mix all the spices and bread crumbs in another. If you are using defrosted chicken, cut the chicken breasts into serving-sized pieces. If you are using frozen breasts, you can cut them into smaller portions after baking. Dip the chicken pieces into the mayonaise/mustard mixture and then coat with the spiced crumb mixture. Put the pieces very close together in a greased baking pan, and bake for 30-35 (40-45 for frozen pieces) minutes at 375掳F., testing for doneness with a sharp knife (look for white color throughout). If you plan to hold this dish for a long time, to avoid dryness, use about 1 1/2 times the mayonaise and mustard before coating the chicken. Chicken Noodle Soup

Ingredients


2 teaspoons butter


1 cup sliced celery


1 cup chopped carrot


1/2 cup chopped onion


1 small potato, diced


1 teaspoon thyme


1 teaspoon poultry seasoning


4 (14 ounce) cans chicken broth


2 teaspoons chicken bouillon


4 ounces egg noodles


2 cups cooked chicken


parsley








Directions


1Melt butter in large pot.


2Saute the celery, carrot and onion for 2 minutes.


3Add potato, thyme, poultry seasoning, chicken broth and boullion.


4Bring to a boil.


5Add noodles and chicken and cook on low for 20 minutes.

Shipwreck Stew


3 large potatoes cutup(leave skins on)


2 celery stalks diced


1 small onion diced


1 can of kidney beans


1 can of pinto beans


2 cups of left over vegetables (corn, or green beans work best). or 2 small cans of vegetables


2 pounds of ground beef or round steak cut into cubes.


1 can of tomato soup


Layer the ingredients in the crock pot as given. Pour tomato soup over top of meat and other ingredients. Add 3/4 can of water to pot. Turn crock pot on high and allow to cook all day, with out stirring. serve with biscuts or corn bread. will serve 6 to 8 people.
hamburger stew


brown some hamburger then put it in a pot.


add water and chopped onions and chopped celery, but not too much celery. Boil for awhile. Then add potatos and carrots along with a 'beef stew' pack and some salt and pepper. You can add garlic if you want to. Some people also add extra flour, tomato sauce and/or canned tomatos.
