Tomato Rice Soup

Ingredients:

* 2 cans (14.5 ounces each) tomatoes, or 1 quart home-canned tomatoes, crushed

* 2 cups water or chicken broth

* 1/4 cup chopped celery with leaves

* chopped fresh parsley

* 1/2 bay leaf, crumbled

* 1/2 teaspoon salt

* 1/8 teaspoon pepper

* 1/4 cup uncooked long grain rice

Preparation:

Bring tomatoes, water and seasonings to a boil in a large saucepan. Add rice and cook 25 minutes or until rice is tender. Taste and add more salt and pepper to taste. Tomato Rice Soup serves 4.
Add a can of corn w/ juice, a couple cans of beef stock (or water + beef boullion cubes), and half or maybe a whole packet of taco seasoning. (amt depends upon how salty it is already). Heat thoroughly and serve over crushed corn chips w/ a dollop of sour cream on top.
Saute chopped onions and garlic, maybe some celery, add the other ingredients with some beef stock, tomato juice and another can of tomatoes, diced or stewed, simmer, taste and season if necessary.
yes just add that mess to some hot beef stock (beef base and water)

add a pint of burgundy, and boil it for 20 minutes reducing to a simmer for 45 minutes. Bon Appetite!
