I would go to http://google.com and type recipe for Tortilla Soup. ( I am not a good cook, so I would recommend google.com if i were you!)
TORTILLA SOUP





1 onion, chopped


1 lg. or small jalapeno peppers, seeded and chopped


2 to 3 cloves garlic, mashed


1 tbsp. oil (more if needed)


1 (1 lb.) can stewed tomatoes


4 to 6 c. chicken or beef stock (canned maybe used, or 7 to 8 bouillon cubes to 6 c. water)


1 can tomato soup


1 tsp. ground cumin


1 tsp. chili powder


1 tsp. salt


1 tsp. pepper


1/2 tsp. Worcestershire sauce


1/2 tsp. Tabasco (or to taste)


4 tortillas, cut in thin slices like noodles (halve or quarter, then cut into strips)


Grated sharp cheese





Saute onion, pepper and garlic in oil until limp. Add tomatoes, stock and tomato soup. Stir thoroughly, then add cumin, chili powder, salt, pepper, lemon pepper, Worcestershire, and Tabasco. Simmer for 1 to 1 1/2 hours, uncovered, between medium and low. The last 10 minutes of cooking, add tortillas. Sprinkle cheese in bottom of bowl. Ladle hot soup over.








GYROS





2 lbs. ground veal %26amp; beef (or just beef)


Plain bread crumbs


Fresh garlic


Thyme


Oregano


Basil


Parsley


Salt


Pepper


2 eggs


Milk





SAUCE:





1 grated cucumber, strained


10 cloves garlic, strained





Mix cucumber and garlic. Add: 1 tbsp. white vinegar 1 c. sour cream Pita bread


Prepare a meat loaf with listed seasonings to taste, mixing well and add milk gradually. Preheat oven to 350 degrees. If needed, grease roasting pan. Meat loaf should be about 1 1/2 inches thick (do touch sides of pan). Cook 1/2 hour to 45 minutes. Chill sauce.





Slice meat loaf thin, put in to pita bread, add lettuce, onion and tomatoes. Pour sauce over gyro.
This is a great recipe. Plus you can scale the servings on this site if you plan on cooking for guests.

tortilla 10 cut into strips


garlic clove 6 finely chopped


epazote 1 tbsp finely chopped


tomato puree 2 cups


cumin 1 tbsp


bay leaf 2


chicken broth 8 cups


chicken breast 2


salt 1 tsp to taste


onion 2 pureed


jalapeno chile 2 seeded %26amp; diced


chipotle chile (canned) 1 tbsp seeded and diced


cheddar cheese 1/2 lb shredded


lemon 4 sliced


oil 1 cup


cayenne pepper 1 tsp to taste


avocado 1 scooped and sliced


chili powder 2 tsps to taste





Directions


In a large saucepan heat 4 tablespoons of the corn oil. Add half of the tortilla strips. Cook until they have absorbed most of the oil. This should take about 2 to 3 minutes.








Add the onion puree and cook for 3 minutes.








Add the garlic, epazote, jalapeno chiles, chipotle chile, tomato puree, cumin, bay leaf, chicken broth, and bring to a boil.








Add the chicken breasts and cook for 40 minutes over low heat.








With the remaining oil fry the remaining tortilla strips and place on a plate covered with paper towels to absorb the excess oil.








Remove the cooked chicken from the soup and allow to cool then shred. Add the salt, chili powder, and cayenne pepper to taste.








Ladle the soup into a blender and puree.








Serve the soup in bowls and top in the following order--tortilla strips, chicken, cheese, and avocado slices. Serve with slices of lemon on the side.
