I know a recipe that's fairly easy.
1 large can of pumpkin puree
10 large prawns
vegetable stock
1/4 cup diced onions
2 tablespoons of butter
1 can of black beans (drained)
curry powder
lime juice
pepper
salt
cayenne pepper
1 cup heavy cream
Chives/grean onions
Season the shrimp with salt, pepper, and a little bit of cayenne pepper, and grill them. When you remove them from the grill, squirt some lime juice on them.
In a large pot, sautee the onions in the butter, and add 3 cups of vegetable stock. Add the pumpkin puree and stir until smoothly combined, over medium heat. Reduce to simmer and add 1 cup of heavy cream. Season to taste with curry powder and cayenne pepper. Add salt if needed. Simmer until thoroughly heated and well combined.
Place 2 shrimp in a shallow dish and pour pumpkin soup over them. Garnish with lime zest, chives, and a slight sprinkle of cayenne pepper.

1) Spicy Shrimp Soup With Pumpkins
Ingredients required:
- 1/2 lb of shrimps
- 4 cups of water
- 1 pumpkin (sliced)
- 1 can of 8 oz. straw mushrooms (drained)
- 2 kaffir lime leaves
- 1 tb of fish sauce (up to 4)
- 2 tb of slice green onions
- 1 tb of chopped chinese parsley
- 1 red chili pepper; seeded and chopped
- 1 chinese parsley springs
Instructions for cooking:
Put in the shrimps; leave shells on for color, if desired. Bring water to a
boil. Add straw mushrooms and kaffir lime leaves immediately and reduce heat to medium-low. Add shrimp and cook for 3 minutes; stir in fish sauce. Sprinkle with green onions. Chinese parsleys and red chili pepper, if desired. Serve hot. Garnish with Chinese parsley springs.
Makes 4 servings.
Note: Fresh mushroom can be substituted for canned mushrooms, but add at end of cooking time.
2) Spicy Stewed Pumpkins with Shrimps
Ingredients required:
- 1/2 lb of shrimps
- 1 cup of water
- 1/4 cup of vinegar
- 1 can of cinnamon stock
- 1 piece of fresh ginger
- 4 cloves
- 1 non calories of sweetener to taste
- 1 small/medium size pumpkin, all cubed
Instructions for cooking:
In a saucepan, combine ingredients except pumpkin and boil for a few minutes. Peel, seed and cube the pumpkin (save seeds to roast for a snack). Drop the pumpkin cubes into the saucepan with spices. Cook gently until fork-tender, stirring frequently. Divide into 4 equal servings. Serve warm or cold.
