1 large onion -- chopped


1/4 cup butter or margarine


3 medium sweet potato -- peeled and chopped


3 medium zucchini -- chopped


1 bunch broccoli -- chopped


2 quarts chicken broth


2 medium potatoes -- peeled and shredded


1 teaspoon celery seed


1 1/2 teaspoons ground cumin


2 teaspoons salt


1 teaspoon pepper


2 cups light cream





In a large kettle, saute onions in butter until transparent but not browned. A


dd the sweet potatoes, zucchini and broccoli; saute lightly for 5 minutes or un


til crisp-tender. Stir in broth; simmer for a few minutes. Add potatoes and s


easonings; cook another 10 minutes or until vegetables are tender. Stir in cre


am and heat through.

Add prepared and chopped vegetables to a pot and add water a few mixed herbs and season.Bring to the boil then simmer for one hour,add a can of creamed sweetcorn.Remove the pan from the heat,blitz with a hand blender or food processor.Return the liquidised soup to pot re-heat,check seasoning add some cream or milk. serve with croutons and chopped parsley.
You don't really need a recipe to make a good vegetable soup. Use a mixture of vegetables (carrots, buttersquash, celery, parsnip, potatoes, anything in fact). Cook it in plenty of water, liquidize and season it to taste. Bring it back to simmering point, add some fresh sweetcorn kernels and some minced or thinly sliced meat (can be pork, chicken or beef --- season lightly with a bit of salt, sugar, Knorr's chicken powder, rice wine, cornflour and black pepper) and some milk. Check taste and add a little soya sauce if necessary (not too much!) and thicken it with a little cornflour (mixed with a little water). It is creamy but much less calorific than it would have been if made with cream.
yeah sure try this.Put 1lb mixed chopped veg(to include7ozof potato)in a saucepanwith 1oz butter.sweat for 20mins with lid on after first having melted the butter and got all veg nicely covered.when veg soft add 1pint stock(made with 3 veg stock cubes is a quick way)bring to boil,reduce to simmer for 30mins.Liquidise.return to saucepan.Add jolly good dollop of double cream or 5oz single Season to taste.heat and serve with good crusty bread.BON APETIT!!!
four carrots, two Zucchini, two slices of cheddar cheese and a stock cube.





boil the carrots for 10 minutes then add the zucchini - when soft transfer to blender, once smooth return to heat and add a cup of water, bring it to the boil add a stock cube and then add the cheese slices stir so they don't stick to the bottom of the pot if you desire you can add seasonings such as salt, lemon pepper, chopped herbs..





i made this recently and it was delicious which wasn't what i was expecting.

1 can cream of chicken soup


1/4 c. butter


1/4 c. dry white wine


1 can milk


1-2 c. fresh or frozen vegetables


1/2 tsp. rosemary


1/2 tsp. thyme


Croutons or shredded cheese





Melt butter. Add milk and soup and white wine. Blend. Add vegetables and spices. Heat through. Top with croutons or cheese.





or if you're vegetarian


Ingredients:


1 large Onion, chopped


1/4 cup Butter

10 ounces frozen chopped broccoli


2 quarts Vegetable or chicken broth


2 medium Red potatoes, shredded


3 Cloves garlic, minced


15 ounces Creamed corn


1 teaspoon Celery seed


1 teaspoon Ground cumin


2 teaspoons Salt


1 teaspoon Pepper


2 cups Light cream








Directions:





Place all ingredients except cream in crockpot. Cover; cook on low for 6-8 hours or until potatoes are cooked. Stir in cream, heat for 15 minutes.
