What about good old veg and barley soup. Use whatever stock you like - be it from boiled chicken or meat joints, or just a stock cube. Add a couple of handfuls of pearl barley or soup mix, a bouquet garni to the stock and simmer for about 20 mins. Cut up carrots, celery and a leek and add to the stock and barley and simmer until veg and barley are soft. Garnish with fresh chopped parsley and enjoy !

My partner is allergic to Gluten and Dairy as well as being Vegetarian.Cooking for her was a bit of a challenge at first but by being limited to certain things it has actually improved my skill as a cook.

here are 2 of my favourite low fat, dairy free soups

1) Carrot %26amp; Lentil soup.

Dice an onion, 4 carrots, a 1'; piece of fresh root ginger,1 tsp coriander powder, ground black pepper, a drop of oil and gently fry in a in a large pan for about 5 minutes. Then add 1 pint of water, a vegetable stock cube and about 1/2 cup of red lentils ( wash these first) and simmer for about 1/2 hour.Add water as neccesary as the lentils will swell and absorb the water and stir regularly. One the lentils have cooked add 1/2 pint soya milk and take off the heat. Then either liquidise in a food processor or add a small amount of cornflour to thicken.Salt to taste.Serve with some fresh Coriander leaf on top. The carrots and lentils go really well together.

2) Chicken soup.

As above with an onion, bay leaf 2 cloves, pepper and add the water , stock cube and some cooked chicken leftovers from a roast carcase. Add the soya milk near the end(Too much heat seems to make it curdle).Thicken with some cornflour and add a good sprinkle of nutmeg.Lovely!

You could try adding some tinned sweetcorn to this too if you like.

I do this without the chicken but with sweetcorn and mushrooms for my girlfriend.

happy cooking.
