Soup Recipes?

What a great day for soup.... anyone have a good soup recipe?Soup Recipes?
If you like spicy I make a Grilled Chicken Tortilla Soup that family and friends just love and it's so easy.





1 1/2 lbs. cooked, shredded chicken


1 - 15 oz. can diced tomatoes


1 - 14 oz. can Green Chile Enchilada Sauce


1 - 4 oz. can diced green chiles


1 - 15 oz. can pinto beans, rinsed and drained


1 - medium onion, chopped


2 Tbs. minced garlic


1/2 cup water


1 - 15 oz. can chicken broth


2 tsp. cumin


2 tsp. chili powder


salt and pepper to taste


1 - 11 oz. cans Mexicorn, drained





Place all ingredients in a soup pot and cook low/medium heat about an 1 hour to 1 1/2 hours covered. Stir occasionally. Or place in crock pot and cook 6-8 hours.





Garnish with chopped cilantro, shredded cheddar or Monterey Jack cheese, sour cream and tortilla strips

* I buy the white corn tortillas and cut them into long skinny strips, fry them in hot oil then season with salt.





* I buy chicken tenders and season with a little oil, salt and pepper then grill on my indoor grill for that extra smoky flavor.

Navy Bean Soup





Ingredients:


1 pound navy beans


2 quarts boiling water


2 ham hocks or a meaty ham bone


1/4 cup chopped onion


1/2 cup chopped celery


chopped ham or ham from the meaty bone


salt and pepper to taste (I add a little seasoned salt along with regular)





Preparation:


Wash beans; place in a large bowl and add boiling water. Let beans soak for a few hours. Simmer ham bone or hocks with the beans until beans are tender. Remove bones and chop ham. Add chopped onions and celery.





Add water to make about 1 gallon. Add ham meat, salt, and pepper to taste. Cook about 30 minutes longer. Navy bean soup recipe serves 12 or more.

1 pound cubed lamb meat (can use beef)


1 teaspoon ground turmeric


1 1/2 teaspoons ground black pepper


1 teaspoon ground cinnamon


1/4 teaspoon ground ginger


1/4 teaspoon ground cayenne pepper


2 tablespoons margarine


3/4 cup chopped celery


1 onion, chopped


1 red onion, chopped


1/2 cup chopped fresh cilantro


1 (29 ounce) can diced tomatoes


7 cups water


3/4 cup green lentils


1 (15 ounce) can garbanzo beans, drained


4 ounces vermicelli pasta


2 eggs, beaten


1 lemon, juiced





Place the lamb, turmeric, black pepper, cinnamon, ginger, cayenne, butter, celery, onion, and cilantro into a large soup pot over a low heat. Stir frequently for 5 minutes. Pour tomatoes (reserve juice) into the mixture and let simmer for 15 minutes.


Pour tomato juice, 7 cups water, and the lentils into the pot. Bring the mixture to a boil, then reduce the heat to simmer. Let soup simmer, covered, for 2 hours.


About 10 minutes before serving turn the heat to medium-high, place chickpeas and noodles into the soup, let cook about 10 minutes (until noodles are al dente). Stir in lemon and eggs, let eggs cook 1 minute.

4 large cans tomato soup





3 can each of the following: green beans, lima beans, corn, peas





5lb potatoes, peeled, cubed





One large onion---diced





One large head cabbage, chopped





One Pound Carrots chopped





Bring to a boil, let simmer over a low flame for a while, until everthing is cooked through.





Great Soup....you will need one large pot!!!!
potatoe soup is a really easy soup to make and it's versatile and filling too!


i have no set recipe. start with five to ten pounds of peeled potatoes. cut them up into large chunks. cover them with water and add about a teaspoon of salt. boil them or cook them in your crockpot (my favorite method as i can start cooking them the night before) until they are cooked through. if you like, you can dice up an onion or add minced dried onion to it while it's cooking as well. when they are completely cooked, drain about half the water. add one cube of butter or margerine per five pounds of potatoes. start mashing them up, but leave bite sized pieces if you like. add a package or two of your favorite shredded cheese. then add milk til it's your desired consistancy. add salt and pepper to taste. some ideas to add: crumbled bacon or sausage (leftovers from breakfast work great), diced ham or chicken, chives, diced tomatoes and any spices you like. you can top with crunched crackers, shredded cheese, chives, or even crunched up nacho chips! i usually start a crockpot at night and when i wake up, the potatoes are done. adding the extras only takes a few minutes and i have a whole pot of soup to take to work to share with co-workers. i NEVER have any leftovers to bring home :)

One of my favorites, is Vegetable Beef Soup.





Brown some ';meat for stewing'; or other beef roast that is inexpensive. If I buy a roast, I just cut it up in small pieces first, and brown in a little olive oil. Once it is browned, I add a bag of frozen mixed vegetables (beans, peas, carrots, potatoes), add whatever else I have in the fridge or see that looks good, a clove of garlic, an onion, and add water. I usually add a beef bullion cube or two, You will usually have to add salt, and then spice it to taste. I can't remember what spices I use, I just open my spice cabinet and start adding things. It usually comes out great, and is really pretty simple to cook. I can throw this together in about 1/2 hour, and be eating it within an hour. Pair it with some fresh baked cheddar-garlic rolls, or even just refrigerated biscuits, and you have a meal that will satisfy the heartiest of appetites.
Start out using canned chicken broth and add your favorite ingredients plus onion, celery, carrots, parsley, cumin, and


croutons.
