Soup recipes?

I'm looking for a good recipe for minestroni soup. What is your favorite recipe? Also, some homemade chicken noodle or any other yummy soup recipes. We don't like onions, bell peppers or mushrooms so please no recipes containing these. Thanks so much.Soup recipes?
She had some good recipes. If you notice most of the recipes start with cooking the meat.then building on the meat foundation. I generally make soup out of what I have in the fridge.


You can either cook the meat and use the cooking juice or put the meat in water to cook. Season the water the way you like with herbs. Let the meat cook. after it is well cooked you can take the bones out and add other veges, noodles or rice. Put the stuff that takes longer to cook in first then gradually add the lesser cooking items until you have all your ingredients in.


I generally add salt last, an older Mexican woman told me a long time ago that salt makes beans get hard if you put it into the water while you were cooking, so I figure it should be added last.Soup recipes?
start with a good base, low salt and fat free broth , or tomato or veg. juice{v-8}. add only meat and veggies that you like . i always stock up on frozen veggies at kroger during their sales. i also like to add rice or potatoes to change them up. also, if you like potato soup, add fresh leek to it, a onion family product, but more green onion flavor. if you like avocados try bacon, and potato with them to a chicken broth, different but good.
Sausage Minestroni





INGREDIENTS


1 pound Bob Evans庐 or Owens庐 Italian Sausage Roll


1/2 cup chopped onions


1 (16 ounce) can small white beans


1 (14.5 ounce) can beef broth


1 (14.5 ounce) can diced tomatoes


1/2 cup small uncooked pasta (i.e. elbow or rotini)


1 small zucchini, diced








DIRECTIONS


In large saucepan, crumble and cook sausage and onions over medium heat until sausage is browned. Drain if desired. Add remaining ingredients to saucepan. Bring to a boil. Reduce heat to low and simmer 15-20 minutes or until pasta is cooked and zucchini is tender. Refrigerate leftovers.





Corrigan's Minestrone





INGREDIENTS


2 tablespoons olive oil


5 potatoes, peeled and cubed


5 carrots, chopped


4 stalks celery, chopped


1 sweet onion, chopped


3 cloves garlic, chopped


1 (6 ounce) can tomato paste


1 (15 ounce) can kidney beans, drained and rinsed


1 (14 ounce) can vegetable broth


1 1/2 quarts water


3 tablespoons chopped fresh basil


2 tablespoons chopped fresh oregano


1 tablespoon salt


2 cups uncooked elbow macaroni








DIRECTIONS


Heat olive oil in a large pot over medium heat. Stir potatoes, carrots, celery, onion and garlic into pot. Mix in tomato paste, beans, broth and water. Season with basil, oregano and salt. Cook and stir 30 minutes, or until vegetables are tender.


Mix macaroni into pot. Continue cooking 10 minutes, or until macaroni is tender





Chicken Noodle Soup I





INGREDIENTS


1 1/2 pounds boneless, skinless chicken meat


1/2 pound uncooked spaghetti


4 cloves garlic


1/4 cup chopped onion


salt to taste


12 cups water


3 tablespoons olive oil





DIRECTIONS


In a large pot, bring the water to a boil. Add the salt and olive oil.


Chop up the chicken, and add it with the onion and garlic to the pot.


Break the spaghetti into small pieces, no longer than half the size of your pinkie; add to the pot. Stir. Let simmer over medium heat for 30 to 45 minutes.
Potato Soup...Peel potatos, wash and boil til done, drain water ( it's ok to leave a little water in pan)...add milk, butter, onion salt, garlic powder , lots of salt and pepper to taste. cook until all is blended and not to hot...eat with crackers.
