Sweetie I'm sorry to hear about your grandma, this is how you do it using just water.





Chop up and fry: onions, peppers, and a couple cloves of garlic. Once they are nice and soft, not browned, add them to a couple cups of water in a soup pan. While this is cooking chop up: carrots, potatoes, celery; and add to the mix. Let simmer for about 40 min then add some diced tomatoes and spices like: black pepper etc. Let cook another 20 min and it's done.





BTW: If you want you can thicken the broth with a little corn starch. I don't bother doing this.Vegetable soup recipe?
There is a buy vegetarian bullion that you can buy or use V8 juice and use that with water to make your base, add potatoes, carrots, celery, onions, garlic if you like, turnips, leeks, chopped tomatoes, shredded cabbage, frozen peas, corn, mixed veggies, green beans or any combination of vegetables that you like. Another way to make it is to brown your onions, celery and garlic in the bottom of your stock pot until they are translucent. Add four cups of water, your carrots, potatoes and other veggies and simmer until they are cooked to your desired doneness.

- You can buy veggie soup stock.


- Save and use the water from when your steam or boil veggies.


- Use a little tomato paste.


- After cooking your soup remove 1 cup of veggies, reduce them to juice in a blender and add back to the soup.
I use vegetable broth, a can of drained diced tomatoes, sauteed onions, cooked carrots and snap beans. Add your favorite seasonings and simmer.
