Vegan lemon & rice soup recipe?

this is a delicious soup! i adapted it to be vegan from an authentic greek reicpe. the short grain rice has amylopectin which adds the rich, creamy, quality that the eggs traditionally provide.





GREEK LEMON-RICE SOUP





2 tbsp. olive oil


2 to 3 oz. uncooked short grain rice


3 c. un-chicken vegetable broth


3 tbsp. lemon juice


Dash of salt


Dash of white pepper





Saut茅 the rice on medium heat until it becomes translucent (this will take 7-10 minutes), stirring constantly to keep it from sticking. Add the broth half a cup at a time, stirring every so often until the liquid is absorbed and the rice releases its creamyness (just like a risotto) your patience and hard work will pay off! You may need to add more broth depending how soupy you like it. Stir lemon juice and season with salt and pepper. Serves 4.Vegan lemon %26amp; rice soup recipe?

Vegan Lemon and Rice Soup


Serves 4





4 cups vegetable broth


1/2 cup rice


1 12-ounce package silken tofu


1 tablespoon extra-virgin olive oil


1/4 teaspoon turmeric


1/2 cup lemon juice


1/4 teaspoon freshly ground black petter





Bring broth and rice to a boil in a large saucepan. Reduce heat to simmer and cook until the rice is very tender, about 15 minutes.





Carefully transfer 2 cups of the rice mixture to a blender. Add tofu, oil, and turmeric; process until smooth. Whisk the tofu mixture, lemon juice, dill, and pepper into the soup remaining the pan. Heat through.
