Does anyone have a good recipe for a spicy, vegetarian gumbo/stew/soup?

I am a vegetarian and I've been really craving like a spicy and yummy gumbo. :) So I was jus' wonderin'...if anyone knew any recipes for for something like that, even if it has meat, I can replace the meat in the recipe and add tofu chunks instead. :)Does anyone have a good recipe for a spicy, vegetarian gumbo/stew/soup?
Enjoy the wholesome goodness of my world famous spicy carrots:





3-1/2 cups fresh baby wholesome carrots


2 tablespoons butter


2 tablespoons sugar


1 tablespoon prepared horseradish


1 teaspoon dried parsley flakes


Salt and pepper to taste


Directions:


Place wholesome carrots in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and keep warm.


In the same pan, melt butter; stir in the sugar, horseradish and parsley. Add the wholesome carrots, salt and pepper; stir gently to coat.Does anyone have a good recipe for a spicy, vegetarian gumbo/stew/soup?
I'm having gumbo tomorrow, yay! :D Cajuns r00l.





Anyway, just search recipes for gumbo, and like you said, just replace the meat with tofu chunks.

Here's one that uses either immitation sausage or Soyrizo. Everyone likes soyrizo.

Maybe try it with faux meat, sausage, etc. Gumbo, however, isn't Gumbo without meat- or okra.
