My son loves broccolli cheese soup and would like me to make home-made. Anyone have a good,fairly easy recipe?

BROCCOLI-CHEESE SOUP





SERVES 6-8





This is quick, easy and so good. The addition of the noodles adds texture and thickens the soup naturally. Packaged croutons could be used, but the homemade are best because they compliment the seasonings in the soup.





INGREDIENTS





* 2 tablespoons unsalted butter


* 1/2 cup finely chopped onion


* 4 large cloves garlic, minced


* 4 cups homemade or low-salt chicken broth (2 14.5-ounce cans plus water to make 4 cups)


* 1/4 cup dry sherry (optional)


* 1 teaspoon dried marjoram leaves


* 1 package (16-ounces) frozen broccoli cuts


* 8 ounces uncooked fine egg noodles, such as Chinese varieties


* 4 cups milk (I use 2%)


* 12 ounces (3 cups) shredded sharp or extra sharp cheddar cheese


* Salt and pepper to taste


* Homemade croutons seasoned with marjoram, parsley and garlic (see notes below)





Heat the butter over medium-high heat in a soup pot. Add the onion and saut茅 until soft, about 5 minutes. Add the garlic and saut茅 an additional minute. Add the broth, sherry, marjoram and broccoli cuts; bring to a boil. Crush the noodles lightly with your hands to break into smaller pieces and stir into the broth. Cook until slightly tender, about 5 minutes. Add the milk and heat thoroughly without boiling. Stir in the cheese and heat just until melted, again without boiling. Season with salt and pepper. (Taste before adding salt as there might be plenty with the broth and the cheese.) Serve immediately or let set on lowest setting, covered. Pass croutons separately to garnish individual bowls.





Notes: The croutons can be browned in a fry pan or in the oven. Either way, sprinkle with just a little olive oil in addition to the seasonings. This soup is very good leftover.My son loves broccolli cheese soup and would like me to make home-made. Anyone have a good,fairly easy recipe?

SAute 1/2 onion chopped, in 3 T butter. Sprinkle 2 T. flout to make a roux. Slowly add 2 qt. chicken broth and bring to a boil. Add 1 package frozen chooped broccoli and return to a boil then reduce heat to medium. Add 1 qt. half and half or milk and heat gently. Shred 8 oz. cheese (I use jack, you can use anything, but avoid cheddar as it gets gloppy) Slowly add cheese and melt. Season with salt, pepper, a little nutmeg and a little garlic powder.
Yes and anyone can make his one.


Go buy a large can of Cheese sauce, and add a package of frozen broccolli,


( defrost it first though). Add eough milk, till it's the consistancy you like.


I start out by adding a little milk at a time.


Remeber it's allways possible to keep adding milk and too thin it out. It's a lot harder to thicken it.

3 cups broccoli (14oz bag frozen baby florets


or fresh steamed)


1/3 cup chopped onion (sauteed in a little butter %26amp;


set aside)


1/4 cup butter or margarine


1/2 cup flour


salt


pepper


2 cups milk


48 oz. chicken broth


16 oz Velveeta Cheese, cubed


*Cook broccoli (I throw mine in the microwave while I am making the soup base). In a soup pan, melt 1/4 cup butter or margarine, stir in flour %26amp; salt %26amp; pepper to taste (to make a roux). Gradually add milk, keep stiring (I use a whisk) %26amp; cook until thick %26amp; creamy (like white sauce). Add broccoli, onion %26amp; chicken broth. Add cubed cheese. Simmer %26amp; stir until cheese is melted. Also, if you'd like, it is really good, cook a bag of kluski noodles (homemade egg noodles) %26amp; serve the soup over those. Very Yummy!
