Does anyone have a recipe for a good homemade (and easy to do as I can't cook!!) Vegetable Soup?

Good vegetable soup





Serves 4-6











Preparation time 30 mins to 1 hour





Cooking time 30 mins to 1 hour























Ingredients


For the base ingredients


2 tbsp olive or sunflower oil, or 30g/1oz butter


1 onion, peeled and chopped


1 garlic clove, peeled and chopped





For the aromatics


1 bouquet garni


and/or 1-2 fresh red chillies, de-seeded and chopped


or 1 tsp or more curry paste or curry powder or spices, e.g. cumin, fennel seeds, cinnamon, etc





For the main ingredients


1 potato, or other thickener if needed, peeled and cut into chunks


500g/18oz vegetables, prepared as appropriate and roughly chopped





For the liquid


1-1.5 litres/1戮-2戮 pints) vegetable or chicken stock, or vegetable cooking water, or a mixture of water and milk





Seasonings


salt


freshly ground black pepper











Method


1. Heat the oil or butter gently in a large saucepan, then add the base ingredients, the aromatics and the main ingredients. Stir around to coat everything in the fat, then sweat very gently for 10-15 minutes.


2. Add 1litre/1戮pints of stock or other liquid, saving the rest for thinning down (if necessary), and season with salt and freshly ground black pepper. Bring up to the boil, then simmer gently for about 20 minutes until all the vegetables are tender.


3. Liquidise in several batches, and return to the pan. Thin down with the reserved stock, water or milk as required, and check the seasoning

i'd imagine your favorite veggies into a pot with some stock would do the trick





i would use carrots potatoes cabbage onions celery.. mmm
Hearty Vegetable Soup


Prep Time:20 min


Total Time:1 hr 5 min


Makes:12 servings, 1 cup each





3 Tbsp. oil


1-1/2 cups chopped onions


1-1/2 cups chopped carrots


1-1/2 cups chopped celery


2 cups cubed unpeeled potatoes


5 cans (14-1/2 oz. each) low sodium beef broth (about 2 quarts)


1 pkg. (15 oz.) marinara sauce


Dash of dried thyme leaves


Dash each of salt and ground black pepper





HEAT oil in large stock pot. Add onions, carrots and celery; cook 5 minutes or until crisp-tender, stirring occasionally.





ADD remaining ingredients; stir. Simmer 30 to 40 minutes or until potatoes are tender, stirring occasionally.

Storage Know-How


Keep potatoes in a cool, dry, well-ventilated place. Avoid storing with onions because potatoes readily absorb odors. Protect them from moisture and light, which may cause them to turn green. Never refrigerate because cold changes the starch to sugar.
Any veg you like and a stock cube or 2!! Hey presto!!
Vegetable Soup





1 Soup bone w/meat


1 Onion; chopped


3 Carrots; sliced


3 Potatoes


5 Stalks of celery


Green beans


Corn


1 cn (large) Tomatoes


1 Handful Barley or alphabet


-macaroni


3 Bay leaves


Salt





Instructions:


Boil soup bone in water enough to cover for 1 1/2 to 2 hours - until meat


comes off bone easily. Remove bone - when cool enough - remove meat and cut


fine. Return meat to stock - add onion, carrots potatoes celery,


greenbeans, corn (not creamed) and tomatoes and bayleaves - add more water


if needed - cook on a low after first coming to a boil. After 1 hour


stir in barley or macaroni - cook another 1/2 to 1 hour - stir often as the


barley will stick to pan.








ANY VEGETABLE YOU LIKE CAN BE ADDED TO THIS.
5 or 6 potatoes, 4 carrots, half a swede, 1 onion and 2 or 3 chicken stock cubes.


chuck it all in a pan of boiling water for about an hour.


Done.
fry up a pound of hamburger with a onion, salt ,pepper, and add three cups of water. dont drain the burger. add a little cabbage if you have it and a bag of frozen mixed veggies. simmer, never boil the soup. add water and beef bullion cube to suit you taste.

Go buy a carton/box of Vegetable Stock.


Go buy frozen/canned Vegetables that you like (I recommend adding Cauliflower to a soup as it adds body).


Other ideas include using canned beans.





Throw in some spices - salt and pepper.....





Pour carton in pot. Put Veggies in pot. Bring to a boil, and then let it simmer.
Add any vegetable you have in, plus a few potatoes (to thicken), boil until soft. Add salt, pepper and a stock cube. Liquidise and hey presto! Fool-proof vegetable soup!!





(So long as you remember to turn the oven on lol :D).
If you want something a little different, my husband loves this:





1 GIANT can of tomato juice or V-8 juice. Put it in a big pot, and add some shredded cabbage plus cut up carrots, celery, onions and whatever else is sitting around in the refrigerator:) (good way to use up leftover cooked veggies) ... If you use V-8, it won't need alot of extra seasoning, but Creole seasoning or Italian seasoning is always good, plus some pepper ... This is REALLY HEALTHY too ....
The basis of any soup is the stock.....


So get a vegetable or chicken stock cube, place in a pint of water in sauce pan bring to vigorous simmer and add vegetables ....cut to same small cube sizes...use what you fancy such as potatos, carrots, leeks,garlic, onions or anything really....cook for about 10 to 15 mins until vegetables are cooked....you can season with Salt and Pepper if needed.
ive got the greatest on it really easy aswell its kind of cheating but u know u get thouse seasonal vegy packs get one of thouse and 2 selery sticks and 2 parsnips and 1 medium potatos put it in a pan add water and a veggy stock cube and boil until a bit mushy then get a hand blender and blend then add a bit of pepper and hey presto!


btw it serves 6 and its really low calorie
buy a packet of soup mix and there is all ways a simple recipe on the packet.
chop 2 leeks, 2 sticks celery, half swede, 6 big carrots, clove garlic half a cabbage 2 potatos. boil together in one big pot until all the chunks are soft. add stock cube and a tin of chopped tomatoes. blend together and heat. add salt, pepper and a dash of worsteshire sauce.
