Does anyone have a very easy soup/chili/stew recipe?

I need the recipe to make 8 quarts, so if it yields any sort of quart amount that's fine because I can just multiply the ingredients.Does anyone have a very easy soup/chili/stew recipe?
I really like beef barley soups.

Ingredients:

* 2 cups beef broth

* 8 cups water

* 2 cups chopped cooked roast beef

* 1/2 cup chopped carrots

* 3 celery ribs, chopped

* 1/2 cup chopped onion

* 1 can (14-1/2 ounces) diced tomatoes, undrained

* 1 cup quick-cooking barley

* 1 teaspoon dried oregano

* 1/2 teaspoon pepper

* 1 can (10-3/4 ounces) condensed tomato soup, undiluted

* 1/2 cup frozen or canned peas

* 1/2 cup frozen or canned cut green or wax beans

* Seasoned salt to taste

Directions:

In a large kettle or Dutch oven, combine the first 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 25 minutes, stirring occasionally. Add soup, peas and beans. Simmer, uncovered, for 10 minutes. Add seasoned salt. Yield: 12-14 servings (about 3-1/2 quarts).Does anyone have a very easy soup/chili/stew recipe?
About 3 quarts(The best chili mix in a package is Williams and follow the recipe on the back, you can't make chili any better than that!)

1 lb lean ground beef

1 (29 ounce) can tomato sauce

1 (14 1/2 ounce) can diced tomatoes, drained

1 (15 ounce) can chili beans, undrained (pinto beans in chili sauce)

1 (15 ounce) can red kidney beans, drained and rinsed

3/4 cup sweet corn, canned, drained

4-5 chipotle chiles in adobo, canned, chopped, sauce reserved

2 bell peppers, chopped (in different colors)

1 large onion, chopped

2 carrots, chopped

2 teaspoons garlic, minced

2 teaspoons Worcestershire sauce

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 ounce dark chocolate (70% broken into small pieces cacao)

1 dash salt, to taste

Optional topping

1 dollop sour cream

Bring a large pan sprayed with nonstick spray to medium heat on the stove. Add turkey and spread it around in the pan to break it up a bit. Cook and crumble until meat is brown and cooked through, about 6 minutes. Drain any fat or liquid, and then transfer turkey to the crock pot.

2Add all other ingredients except for the chocolate to the crock pot. Add 1 tablespoon adobo sauce (from the canned chipotles). Mix well to combine.

3Cover and cook on high for 2 hours, and then reduce heat to low and cook for an additional 3 hours. (OR cover and cook on low for 6 - 7 hours straight.)

4Add chocolate and stir until pieces melt and disappear into chili. Cover and cook for 1 hour longer on low. Add salt to taste. If you like, top each serving with a little sour cream.

I make this often LOVE IT!!! You must have the cabbage, it's not the same without it!

Posole(mexican pork hominy soup) About 3 quarts

http://images.search.yahoo.com/images/vi鈥?/a>

The soup:

1 can of mexican hominy in the mexican food section at grocery

3 Pork shoulder roast (in the past I've used pork butt and/or chicken)

Mixed dried chiles (New Mex, *****, California or whatever you like)

Tomatoes (I used a small can of diced)

Onion

Garlic

Chicken broth (I like Pacific organic with salt)

Oregano

Bay leaves

Cilantro

Olive oil

Salt

The toppings:

Cabbage (thinly sliced)

Monterey Jack (grated)

Cilantro (picked of stems)

Radishes (thinly sliced)

Onions (diced)

Lime wedges

Jalape脙卤o (sliced)

Tortilla chips (homemade is a must)

Get the meat cooking since it's a tough cut that needs a long, slow cooking (like two or three hours) to tenderize it. In the large soup pot start with a couple tablespoons of olive oil, adding a diced onion when the oil is hot. Cook awhile till the onions soften up, then add the pork roast cut up into large chucks, about 3 inches cubed. Brown the meat if you can, or not, either is good. Throw in some minced garlic, stir, and let it cook a couple minutes. Add a box of chicken broth and/or some water. A few bay leaves and some Mexican oregano can go in now.

Heat a cast iron skillet and add the chiles turning them to warm them. I forget why I do this 鈥?I think it softens them. I didn't want too spicy a soup this time so I pulled off the stem ends and tried to remove most of the seeds. I then put about six or seven chiles into the blender with some water to make a basic chile paste. I've made more elaborate mixtures before, but this worked fine.

Add the chile paste to the soup and a can of fresh tomatoes if you wish. When you have drained and rinsed the hominy add it to the soup. If it looks like you need some more liquid add water or broth. When the hominy has cooked an hour or you can add some salt. Keep tasting it and adjusting the flavors to your liking. Sometimes I make mine spicy hot and sometimes mild.Top with your favorite toppings from the list above. Homemade fried tortilla chips make this a truly scrumptious soup. Just cut up corn tortillas and fry them up in a pan, add salt, and then hide till dinnertime because they will get eaten up otherwise.

Here is about 12 or more different chili variations. I really like the chickenn and white bean chili.
