one butternut squash per person.

cut the top pff and scoop out the seeds.

fil with grated gruyer cheese and salt and peper and cream. layer it up until it is full.

replace the top and bake in an oven for about 45 mins.

you eat it dirctly from the shell of the pumkin scooping the flesh as you go.....the cream/cheese has melted making it really rather delicious and lovely.

Here is a recipe that my Grandmother made over 50 years ago...

Its in my latest cookbook that will be released late October...

Try it out and let me know what you think...

Pumpkin Soup.

Two pounds of pumpkin. Take out seeds and pare off the rind. Cut into small pieces, and put into a stew-pan with

half a pint of water. Simmer slowly an hour and a half, then rub through a sieve and put back on the fire with one

and a half pints of boiling milk, butter the size of an egg, one tea-spoonful of sugar, salt and pepper to taste, and three

slices of stale bread, cut into small squares. Stir occasionally; and when it boils, serve. 4
