you can make Chicken Cordon Bleu

4 skinless, boneless chicken breast

6 slices Swiss or jack cheese

4 thin sliced ham

1 can cream of chicken or cream on mushroom

Pound chicken breast to 录-inch thickness. Place 1 cheese slice and 1 ham slice on each breast. Fold the breast in half. [[using toothpicks to secure if necessary]]. Place in glass baking dish that has been sprayed with Pam. Spread cream of chicken all over the tops of the breasts until its completely covered. Then place the last two peices of cheese on top of the sauce, so it will melt while baking. Bake at 350掳 for 45 minutes. [[When done, cut a peice of chicken open to make sure it is fully cooked]].

enjoy(:

good sides include:

rice pelaf

green beans

and/or salad
Hi,

Here is a recipe I make when I have bits and pieces of leftovers. Mind you I am a chef. But with 5 children at home I also feel the recession. I can't always cook at home like I do in the restaurant. My kids luv this recipe. I got it from the Campbell's site. they have tons of good easy cheap recipes and ideas. Hope this helps you hun.

Thanks,

Creamy Chicken Noodle Soup

Here's a quick and easy chicken noodle soup recipe, and it's hearty enough for a family meal. Serve this soup for lunch or dinner, along with crusty rolls or biscuits and a tossed salad. Feel free to use broken linguini or thin noodles instead of medium noodles.

Prep Time: 15 minutes

Cook Time: 40 minutes

Ingredients:

2 tablespoons butter

1/4 cup fresh chopped parsley or about 1 tablespoon dried parsley flakes

2 to 3 cups diced chicken

1 can (10 3/4 ounces) cream of chicken soup, undiluted

5 cups chicken broth

1 scant teaspoon poultry seasoning

1/4 teaspoon pepper

2 cups frozen peas and carrots

1 1/2 cups heavy cream or half-and-half

4 ounces medium noodles, cooked and drained

Salt, to taste

Preparation:

In a large pot or Dutch oven, melt butter over medium heat. Add onion and celery and saut茅 until onion is tender. Add the parsley, chicken, chicken broth, soups, poultry seasoning, thyme, and pepper. Bring to a boil; reduce heat to medium-low and simmer for 20 minutes. Add the frozen peas and carrots, cover, and simmer for 10 minutes longer. Stir in the cream or half-and-half, along with the cooked noodles; add salt to taste. Heat through.

Make a casserole

Chicken %26amp; Rice Casserole

1 can (10 3/4 ounces) Cream of Chicken Soup

1 1/3 cups water

3/4 cup uncooked regular long-grain white rice

1/2 teaspoon onion powder

1/4 teaspoon ground black pepper

2 cup frozen mixed vegetables

4 skinless, boneless chicken breast halves

1/2 cup shredded Cheddar cheese (if you have it)

Heat the oven to 375掳F. Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish.

Top with the chicken. Season the chicken as desired. Cover the baking dish.

Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Stir the rice before serving.
according to how broke I was, I'd consider eating the items separately each evening to save on groceries.

Here are the substitutions you can use so you don't have too much to buy.

Replace the beans with rice.

Use your veggie instead of corn (obviously, use your own judgment on this one)

Skip the sour cream. It's not enough to make a difference. It will just be a little thinner.

Use whatever salsa or mexican sauce that you have.

Use whatever cheese you have.

I think this would really turn out yummy. Tortillas are cheap. Buy a large bag for a cheaper price and freeze whatever you don't use by separating with pieces of wax paper and putting them into a ziplock bag.

Be creative. It's a lot more fun and sometimes even better than using the actual recipe. I do it all the time and my ';new'; recipes are better.
i'm sorry, i don't really know how you could use the soup; but i know how you could use the chicken! =]

you can pan fry the chicken breasts by first pounding them out to about 1/4-1/2inch thick (you can keep them normal size, but it won't taste as yummy); next, sprinkle salt, pepper, and chili powder (if you have any) and rub into chicken (both sides). Put a pan over med-high heat; melt some butter and oil (enough to cover bottom of pan). dredge chicken in flour and fry until golden brown (about 5min per side).

you can make the rice too, then serve with rice on bottom and chicken on top!

hope this helps! =]
cook the rice

spoon warm chili on top

boil the noodles

cook the cream of chicken soup like gravy and spoon on top

bake the chicken breasts

make simple stuffing from bread and veggies

use leftover chicken breasts for sandwiches

serve with veggies

use any leftovers for a stir fry and serve with rice
