Any good soup recipes?

im dying for some new recipes! it can be anything that you like or would recommend to people. please include all the ingredients and etc. :]Any good soup recipes?
You can't go past a leek and potato soup. Simple, but really good. Plus its a base for most other soups.





For around 4 people, I would use:





1 small onion


2 leeks


1 clove garlic


1 large potato


1 chicken stock cube


Dash of cream





Cook off the onion, garlic and leeks in a bit of butter. Once cooked through cover with water and add stock cube.


Peel and slice potato and add. Simmer until potato is cooked through and liquidise.


If the soup is too thick, just add more water until its correct. If too thin, add a bit more potato and cook through again.


Once done, add the cream and some salt and pepper and there you go.Any good soup recipes?
French Onion Soup





6 tablespoons butter


8 medium size onions, sliced thinly


4 thyme sprigs, leaves stripped


1/2 cup sherry


4 cups brown chicken stock


2 cups veal stock


Salt and freshly ground black pepper


French bread croutons


2 cups grated Gruyere cheese





In a large saucepan or Dutch oven, add butter and melt over medium heat. Add the onions and lower the heat to medium low. Add the thyme leaves and cook, stirring frequently, until the onions start to turn golden brown, about 25 minutes. Add the sherry and cook until the sherry is almost completely evaporated and the onions are brown, about 15 minutes.





Add the stocks and bring to a boil. Lower the heat to a simmer and simmer for 30 minutes. Season, to taste, with salt and pepper.





Preheat the oven to 450 degrees F.





Ladle the soup into 8 oven-proof soup bowls. Place the soup bowls on a sheet pan. Place the croutons on top of the soup, to cover. Top each bowl with 1/2 cup grated cheese. Place in the oven and cook until the cheese is golden brown and bubbly, about 10 minutes.
In my opinion any soup recips is good...I love soup!
Creamy tomato soup, or creamy brocli soup.
I make a fabulous baked potato soup. I don't measure anything but here it goes:





Cut up 2 pounds of bacon and cook until crisp. Do not drain.





Add one large sweet onion and cook until translucent.





Add 4 or 5 medium sized potato's that have been scrubbed and cut into pieces. I don't peel them.





Saute' the potato's for about 15-20 minutes.





Add about 2 cups of milk and 2 cups of cream





Add about a tablespoon of salt.





Simmer for about 20 minutes.





Add 1 16 oz container sour cream.





Add 3 cups shredded cheese of your choice. I use cheddar or jack or colby or a mixture.





Heat until cheese is completely melted. Taste for seasoning.





This is like having a baked potato in a bowl...enjoy!
