Anyone have a good recipe for risted Shetland mutton (salted ) and tattie soup?

tattie soup...a leek , stick celery, four med carrots..quarter of turnip.2 large totties(dont peel) or 4 medium,4 chicken stock cubes..chop veg into peices roughly same size cept potatoes,make them smaller, in a soup pot, add a spoonful of oil and add in veg, cover and sweat the veg till is tender, dissolve stock cubes in boiling water and add a wee bit at a time, till all veg is soft,remove some potatoes and keep aside, blitz the remaining soup with a blender and let it simmer, add the totties and make up to required amount according to taste with water, add salt and white pepper and enjoy. never heard of shetland mutton before but sounds bloody yummy
